Key Lime Pie Chia Seed Pudding
Need a sweet treat or snack? This chia seed pudding is creamy, refreshing, and packed with protein and fiber.
Recipe inspired by Jenn Eats Good.
Ingredients:
3 Tbsp chia seeds
Juice and zest of 1 lime
½ cup milk (I use Fairlife Fat-Free milk)
½ cup plain Greek yogurt
1 Tbsp maple syrup
Directions:
1. Add chia seeds, lime juice and zest, milk, Greek yogurt, and maple syrup to a bowl or mason jar. Stir.
2. Leave overnight in the fridge.
3. Enjoy!
Storage:
Store in the fridge for up to 4 days.

-If you are diabetic and need to reduce sugar/carbs, you can swap the maple syrup for your sweetener of choice such as Monk fruit sweetener.
