Need a breakfast that you can grab and go? Try these meal prep friendly breakfast sandwiches.
Ingredients:
6 large eggs
½ cup cottage cheese (I used small curd 4% milkfat)
¼ tsp garlic powder
¼ tsp black pepper
6 English muffins (I used Thomas’ Light Multi-Grain)
6 slices sharp cheddar cheese
6 slices of turkey bacon
Olive oil cooking spray
Directions:
1. Preheat oven to 350F. Spray an 8×8 baking dish with olive oil cooking spray.
2. In a large bowl add eggs, cottage cheese, garlic powder, pepper. Stir together.
3. Pour the egg mixture into the baking dish. Bake for 20-25 minutes until the eggs are set. Remove from the oven and let cool. Cut into 6 pieces.
4. While your eggs are cooking, cook the turkey bacon. To a large skillet, add the slices of turkey bacon and cook on medium heat. Cook for about 5 minutes and flip. Cook for an additional 2-3 minutes until heated through.
5. Toast your English muffins.
6. Assemble your sandwiches. Start with the bottom half of an English muffin, add your egg, a slice of turkey bacon, a slice of cheese, and the English muffin top. Repeat to make 6 sandwiches. Enjoy!
